I have been in the restaurant business for 25 years and have used many cookbooks as references and guides in my line of work and as Executive Chef Partner for The Capital Grille. In my opinion, these days there are many fad diets that come and go but Nichole has put together a book that is that is real and heartfelt. I have many guests that sincerely benefit from recipes such as these that are truly "gluten free". I recently had the pleasure of recreating some of these recipes for a special party. These recipes were simple enough to create at home as designed and even executable on a larger scale.
